Bacon Jam Smoked Cream Cheese

Ingredients:

  • 1 lb. Bacon, diced
  • 1 Yellow Onion, diced
  • 5 Cloves Garlic, minced
  • ¼ cup Knotty Rub
  • ¼ cup Brown sugar
  • ¼ cup Honey
  • ¼ cup Balsamic Vinegar
  • 1 block Cream Cheese
  • Salt (to taste)
  • Knotty Wood Competition Plummond Pellets

Instructions:

  1. Preheat the smoker to 225 F and fill the hopper with Knotty Wood Plummond pellets.
  2. Use a knife to make a crosshatch on top of cream cheese, and season liberally, place in the smoker to smoke for 20-25 minutes.
  3. While cream cheese is smoking make the bacon jam. Start by chopping the bacon into small pieces.
  4. Cook the bacon in a large skillet until crispy.
  5. Transfer the bacon to a plate with a paper towel, leave some bacon grease in the pan.
  6. Add the diced onion and garlic to the skillet and cook over medium heat until soft.
  7. Stir in the brown sugar, honey, and balsamic vinegar.
  8. Return the bacon to the skillet and let the mixture simmer until it thickens.
  9. Top the smoked cream cheese with the bacon jam.
  10. Serve with your favorite crackers and enjoy!
