Smoked Beef Ribs
Ingredients:
- 4.5 lb Beef Ribs in a single plate/rack
- ¼ cup Cobram Estates Extra Virgin Olive Oil
- Knotty Rub
- Knotty Wood Almond Wood Pellets
Instructions:
- Preheat the pellet smoker to 275F and fill the hopper with Almond wood pellets.
- Start by removing the membrane on the beef ribs. Pat dry with a paper towel.
- Generously season both sides of the ribs with Knotty Rub. Make sure that everything is evenly coated in seasoning.
- Place the rack meat side up in the smoker and cook until an instant read thermometer reads 206-210F at the thickest part of the meat. This should take around 3-4 hours. (Optional) Spray the meat with apple juice every hour.
- Once at temperature, remove the rack and wrap in uncoated butcher paper, then set in a cooler to rest for an hour. If you cannot get paper you can use foil, but your bark will soften.
- Slice ribs between bone and serve.
