Smoked Beef Ribs

Ingredients:

  • 4.5 lb Beef Ribs in a single plate/rack
  • ¼ cup Cobram Estates Extra Virgin Olive Oil
  • Knotty Rub
  • Knotty Wood Almond Wood Pellets

Instructions:

  1. Preheat the pellet smoker to 275F and fill the hopper with Almond wood pellets.
  2. Start by removing the membrane on the beef ribs. Pat dry with a paper towel.
  3. Generously season both sides of the ribs with Knotty Rub. Make sure that everything is evenly coated in seasoning.
  4. Place the rack meat side up in the smoker and cook until an instant read thermometer reads 206-210F at the thickest part of the meat. This should take around 3-4 hours. (Optional) Spray the meat with apple juice every hour.
  5. Once at temperature, remove the rack and wrap in uncoated butcher paper, then set in a cooler to rest for an hour. If you cannot get paper you can use foil, but your bark will soften.
  6. Slice ribs between bone and serve.
