Smoked Garlic Butter Mashed Potatoes

Ingredients:

  • 4-5 lbs yukon gold potatoes, cubed
  • 2 1/2 teaspoons garlic salt
  • ¾ teaspoon ground black pepper
  • 1/2 cup Heavy cream
  • 1/2 cup Butter (1 stick)
  • 4-5 cloves Garlic, minced
  • 5-6 slices Bacon, chopped
  • 1 bunch Parsley

Instructions:

  1. Preheat the smoker to 225 degrees F.
  2. Bring a large pot of water to boil and start peeling, cubing potatoes.
  3. Add cut up potatoes to a pot of boiling salted water.
  4. Boil potatoes for 15-25 minutes or until they are fork tender.
  5. Remove from heat, drain potatoes and add to a large bowl.
  6. Make a garlic butter using 1 stick of butter, 4 cloves of fresh minced garlic, parsley, salt, and pepper.
  7. Add the garlic butter and heavy cream to the cooked potatoes.
  8. Mash everything together until it is your desired consistency.
  9. Taste and adjust salt or other ingredients, as-desired.
  10. Pour out mashed potatoes into a foil pan and place on the smoker (uncovered) for 30 minutes to an hour.
  11. Remove from the smoker and sprinkle with cooked bacon and parsley.
  12. Place back on the smoker for approximately 30 minutes or until the cheese is melted.
  13. Remove and garnish with bacon and parsley.
  14. Serve hot and enjoy!
