Smoked Garlic Butter Mashed Potatoes
Ingredients:
- 4-5 lbs yukon gold potatoes, cubed
- 2 1/2 teaspoons garlic salt
- ¾ teaspoon ground black pepper
- 1/2 cup Heavy cream
- 1/2 cup Butter (1 stick)
- 4-5 cloves Garlic, minced
- 5-6 slices Bacon, chopped
- 1 bunch Parsley
Instructions:
- Preheat the smoker to 225 degrees F.
- Bring a large pot of water to boil and start peeling, cubing potatoes.
- Add cut up potatoes to a pot of boiling salted water.
- Boil potatoes for 15-25 minutes or until they are fork tender.
- Remove from heat, drain potatoes and add to a large bowl.
- Make a garlic butter using 1 stick of butter, 4 cloves of fresh minced garlic, parsley, salt, and pepper.
- Add the garlic butter and heavy cream to the cooked potatoes.
- Mash everything together until it is your desired consistency.
- Taste and adjust salt or other ingredients, as-desired.
- Pour out mashed potatoes into a foil pan and place on the smoker (uncovered) for 30 minutes to an hour.
- Remove from the smoker and sprinkle with cooked bacon and parsley.
- Place back on the smoker for approximately 30 minutes or until the cheese is melted.
- Remove and garnish with bacon and parsley.
- Serve hot and enjoy!
