Ingredients:
- 1 rack St. Louis-style pork ribs (membrane left on)
- Knotty Rub, enough to generously coat both sides of ribs
- ½ cup whiskey
- ¼ cup Knotty Wood honey
- (Optional) 1–2 tbsp water or apple cider vinegar (to thin spritz if needed)
Instructions:
- Pat ribs dry, then season with Knotty Rub generously on both sides.
- Let the ribs sit while your smoker heats up.
- Preheat your grill to 300°F using Plummond pellets
- Mix together in a spray bottle or jar: whiskey and honey
- Shake well
- Place the seasoned ribs with the membrane side down on the smoker grates.
- After about 45 minutes, start spritzing with the whiskey-honey mix every 45 minutes to build bark and add sweetness.
- The ribs will take around 2-½ to 3 hours to cook but you will know they are ready when the meat starts to pull away from the bones or they have reached an internal temperature of at least 195-200F.
- Let the ribs rest for 10–15 minutes.
- Slice between the bones and enjoy!
