Knotty Rub Party Ribs
Ingredients:
- 1 full rack of pork baby back ribs (or spare ribs)
- ½ cup Knotty rub
- ½ can Beer
- 4 Tablespoons (half stick) unsalted butter cut in 6 to 8 pats
- 1.5 Tablespoons yellow mustard
- 3 Tablespoons honey (optional)
Instructions:
- Start preheating your smoker or grill to 300 °F.
- Using a sharp knife, cut the rack into individual ribs by cutting in between each bone.
- Coat each rib with a layer of yellow mustard.
- Generously season each rib with Knotty Rub or your favorite BBQ rub.
- When your smoker is up to temperature, place each rib onto the bottom rack in the smoker.
- After 2 hours, remove the ribs from the smoker and place them into a disposable foil pan.
- Top the ribs with the butter pats, ½ can of your favorite beer, and more rub or honey. Cover tightly with heavy duty aluminum foil and place back on the smoker or grill.
- Cook for 1 more hour at 350 °F or until the ribs reach an internal temperature of around 200-205 °F and then remove from the smoker.
