Garlic Parmesan Wings

Ingredients:
For the Wings:

  • 2 lbs chicken wings (drumettes and flats)
  • 2 tbsp olive oil
  • 5 tbsp garlic salt
  • 2 tsp paprika
  • 1 tbsp black pepper

For the Garlic Parmesan Sauce:

  • 3 tbsp unsalted butter
  • 3 garlic cloves, minced
  • ½ tbsp salt
  • 1 tsp paprika
  • 2 tbsp grated Parmesan cheese (plus extra for garnish)
  • 1 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Preheat the pellet smoker to 250°F using KW Plummond pellets.
  2. Pat the wings dry with paper towels and toss them in a large bowl with olive oil, garlic salt, paprika, and pepper.
  3. Place the wings directly on the smoker grates. Smoke for about 1.5-2 hours or until the internal temperature reaches 175°F.
  4. For crispy skin, increase the smoker temperature to 375°F and cook for an additional 15-20 minutes.
  5. While the wings are finishing, melt the butter in a small saucepan over medium heat, and add the minced garlic, salt and paprika and cook for about 2 minutes.
  6. Stir in the Parmesan cheese until melted and combined.
  7. Remove the wings from the smoker and immediately toss them in the garlic Parmesan sauce.
  8. Sprinkle with extra Parmesan and parsley for garnish.
  9. Serve hot and enjoy!
