Bacon Wrapped Chicken Lollipops

Ingredients:
For the Chicken:

  • 10 chicken drumsticks
  • 10 slices of thin-cut bacon
  • 2 tbsp oil
  • Knotty Rub

Salty-Sweet Garlic Butter Dipping Sauce:

  • 1/4 cup salted butter
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 1 tbsp White Vinegar
  • 2 tbsp Knotty Rub

Instructions:
Prepare the Chicken Lollipops:

  1. Using a sharp knife, cut around the bone at the thickest end of the drumstick, removing the tendons and pushing the meat down to form a lollipop shape.
  2. Rub the drumsticks with oil, then coat them heavily with Knotty Rub.
  3. Tightly wrap each chicken lollipop with a slice of bacon, securing the ends with a toothpick if needed.
  4. Set your smoker to 300°F, using KW Plum wood pellets for a sweet, smoky flavor.
  5. Smoke the chicken for 1.5 to 2 hours or until the internal temperature reaches 175°F. And the bacon is crispy and caramelized.

Dipping Sauce:

  1. In a small saucepan over medium heat, melt the butter and cook the minced garlic for 1-2 minutes.
  2. Add the honey, white vinegar, Knotty Rub, and lemon juice. Stir until the sugar dissolves and the sauce is slightly thickened.
  3. Serve the smoked chicken with the dipping sauce and enjoy!
