Bacon Wrapped Chicken Lollipops
Ingredients:
For the Chicken:
- 10 chicken drumsticks
- 10 slices of thin-cut bacon
- 2 tbsp oil
- Knotty Rub
Salty-Sweet Garlic Butter Dipping Sauce:
- 1/4 cup salted butter
- 2 cloves garlic, minced
- 1 tbsp honey
- 1 tbsp White Vinegar
- 2 tbsp Knotty Rub
Instructions:
Prepare the Chicken Lollipops:
- Using a sharp knife, cut around the bone at the thickest end of the drumstick, removing the tendons and pushing the meat down to form a lollipop shape.
- Rub the drumsticks with oil, then coat them heavily with Knotty Rub.
- Tightly wrap each chicken lollipop with a slice of bacon, securing the ends with a toothpick if needed.
- Set your smoker to 300°F, using KW Plum wood pellets for a sweet, smoky flavor.
- Smoke the chicken for 1.5 to 2 hours or until the internal temperature reaches 175°F. And the bacon is crispy and caramelized.
Dipping Sauce:
- In a small saucepan over medium heat, melt the butter and cook the minced garlic for 1-2 minutes.
- Add the honey, white vinegar, Knotty Rub, and lemon juice. Stir until the sugar dissolves and the sauce is slightly thickened.
- Serve the smoked chicken with the dipping sauce and enjoy!
