Ingredients:
- 1 whole pork loin (4–5 lbs)
- 2 tbsp bacon fat
- 2–3 tbsp honey
- 3–4 tbsp Knotty Rub
- 1/2 cup pineapple chunks
- 3–4 cloves garlic, minced
- Juice of ½ a fresh lemon
- ¼ cup white onion, chopped finely
- Green onion for garnish
Instructions:
- Heat a cast iron skillet or your pellet grill to high heat-450-500 F.
- Coat the pork loin with bacon fat or olive oil.
- Sear all sides until golden-brown and crusty (about 2–3 minutes per side).
- Pull it off the heat.
- While still hot, drizzle honey all over the loin.
- Coat generously with Knotty Rub — the honey will help it stick and form a flavorful crust.
- Set the loin in a double layer of foil to form a boat.
- Add pineapple chunks, a little juice, smashed garlic, lemon juice, and sliced onion around the pork.
- Wrap tightly to seal in moisture and flavor.
- Preheat your pellet grill to 300°F using Knotty Wood Almond pellets.
- Place the foil-wrapped pork loin on the grill and cook for about 25 minutes, or until it reaches an internal temp of 140–145°F.
- Let it rest for 10–15 minutes.
- Slice and pour the sweet-savory juice from the foil over the top of the pork loin for extra flavor.
