Seared Pork Loin with a Honey Glaze

Ingredients:

  • 1 whole pork loin (4–5 lbs)
  • 2 tbsp bacon fat
  • 2–3 tbsp honey
  • 3–4 tbsp Knotty Rub
  • 1/2 cup pineapple chunks
  • 3–4 cloves garlic, minced
  • Juice of ½ a fresh lemon
  • ¼ cup white onion, chopped finely
  • Green onion for garnish

Instructions:

  1. Heat a cast iron skillet or your pellet grill to high heat-450-500 F.
  2. Coat the pork loin with bacon fat or olive oil.
  3. Sear all sides until golden-brown and crusty (about 2–3 minutes per side).
  4. Pull it off the heat.
  5. While still hot, drizzle honey all over the loin.
  6. Coat generously with Knotty Rub — the honey will help it stick and form a flavorful crust.
  7. Set the loin in a double layer of foil to form a boat.
  8. Add pineapple chunks, a little juice, smashed garlic, lemon juice, and sliced onion around the pork.
  9. Wrap tightly to seal in moisture and flavor.
  10. Preheat your pellet grill to 300°F using Knotty Wood Almond pellets.
  11. Place the foil-wrapped pork loin on the grill and cook for about 25 minutes, or until it reaches an internal temp of 140–145°F.
  12. Let it rest for 10–15 minutes.
  13. Slice and pour the sweet-savory juice from the foil over the top of the pork loin for extra flavor.
