Smoked Bacon-Wrapped Jalapeño Poppers

Ingredients:

  • 10 fresh jalapeños, halved and deseeded
  • 8 oz cream cheese, softened
  • ¼ cup Groark Boys BBQ – Pork rub
  • 20 slices of thick-cut bacon
  • Toothpicks (optional)

Instructions:

  1. Preheat your smoker to 250°F, using almond wood pellets for a rich, mild smoke flavor.
  2. Prepare the jalapeños – Slice them in half lengthwise and remove the seeds and membranes (leave some for extra heat if you like it spicy).
  3. In a bowl, mix softened cream cheese, and rub until smooth.
  4. Fill each jalapeño half with the cream cheese mixture, slightly mounded.
  5. Take a slice of bacon and wrap it tightly around each stuffed jalapeño. Secure with a toothpick if needed.
  6. Place the bacon-wrapped jalapeños horizontally on the smoker grates. Smoke at 250°F for 1.5 to 2 hours or until the bacon is crispy and the jalapeños are softened.
  7. Let them rest for a few minutes, then dig in!
