Smoked Bacon-Wrapped Jalapeño Poppers
Ingredients:
- 10 fresh jalapeños, halved and deseeded
- 8 oz cream cheese, softened
- ¼ cup Groark Boys BBQ – Pork rub
- 20 slices of thick-cut bacon
- Toothpicks (optional)
Instructions:
- Preheat your smoker to 250°F, using almond wood pellets for a rich, mild smoke flavor.
- Prepare the jalapeños – Slice them in half lengthwise and remove the seeds and membranes (leave some for extra heat if you like it spicy).
- In a bowl, mix softened cream cheese, and rub until smooth.
- Fill each jalapeño half with the cream cheese mixture, slightly mounded.
- Take a slice of bacon and wrap it tightly around each stuffed jalapeño. Secure with a toothpick if needed.
- Place the bacon-wrapped jalapeños horizontally on the smoker grates. Smoke at 250°F for 1.5 to 2 hours or until the bacon is crispy and the jalapeños are softened.
- Let them rest for a few minutes, then dig in!
