What to Look for in Terms of Pork Belly
If you’ve ever purchased pork belly, then you know that even if they’re all in the same section of the same store, they sure aren’t all the same. One thing to always look for: the fat to meat ratio. Now, you might think “OK, so I want to have as much meat and as little fat as possible.” No. Not exactly. Instead, you’re going to want to make sure that there’s plenty of fat on it. Why? Because that’s what’s going to make the flavor burst. That’s where the energy that comes from is that. You want thickness and uniformity throughout it. That’s key to our recipes.
How We Cook Pork Belly Differently
It starts before we even get to the pellets. For one, we cut it differently. We cut the pork belly into inch strips. This helps the pork belly to cook quickly and evenly. We coat them with Knotty rub and then cook them at 275-285 F. for about 3 hours. That fat, then, renders down, giving the full flavor burst of that rub and meat mixed together.
Things We’ve Learned Along the Way
Something “super cool” we learned from some guys we met recently at the national hardware show is to drip pork belly in a collapsible Tupperware-like container with a lid instead of little paper cups for the drip. Then, once you’re done with that, you can also collapse this container all the way down to where it’s flat. Then, voila, you have a cutting board.
