Apricot Dump Cake
Ingredients
- 1lb fresh apricots, pitted and thinly sliced
- ½ cup sugar (optional)
- 1 can (12 oz) evaporated milk
- 3 whole eggs
- 1 teaspoon cinnamon
- 1 box Vanilla Cake Mix
- 1 ½ sticks melted butter
- Fresh whipped cream
Instructions:
- Preheat the pellet grill to 350°F. Using Knotty Wood Almond Wood pellets.
- Pitt and thinly slice all the fresh apricots.
- In a large bowl, toss the sugar with the freshly sliced apricots.
- In a separate large bowl, whisk together the milk, eggs, and cinnamon. Pour mixture over the apricots and toss everything together until combined.
- Pour mixture into a greased 13-inch cast iron skillet. Sprinkle vanilla cake mix over the wet ingredients. Make sure the cake mix is spread evenly over the entire apricot mixture.
- Melt the butter in a pan over low heat and pour the melted butter evenly over top of the cake mix.
- Bake in the pellet grill for 1 hour, or until the top is browned and bubbling.
- Let cool on the counter for a few hours.
Dollop with fresh whipped cream and enjoy!
