Apricot Dump Cake


  • 1lb fresh apricots, pitted and thinly sliced
  • ½ cup sugar (optional)
  • 1 can (12 oz) evaporated milk
  • 3 whole eggs
  • 1 teaspoon cinnamon
  • 1 box Vanilla Cake Mix
  • 1 ½ sticks melted butter
  • Fresh whipped cream
  • Knotty Wood Almond Wood Pellets


  1. Preheat the pellet grill to 350°F, using Almond Wood pellets for that added subtly sweet flavor .
  2. Pitt and thinly slice all the fresh apricots.
  3. In a large bowl, toss the sugar with the freshly sliced apricots.
  4. In a separate large bowl, whisk together the milk, eggs, and cinnamon. Pour mixture over the apricots and toss everything together until combined.
  5. Pour mixture into a greased 13-inch cast iron skillet. Sprinkle vanilla cake mix over the wet ingredients. Make sure the cake mix is spread evenly over the entire apricot mixture.
  6.  Melt the butter in a pan over low heat and pour the melted butter evenly over top of the cake mix.
  7. Bake in the pellet grill for 1 hour, or until the top is browned and bubbling.
  8. Let cool on the counter for a few hours.

Dollop with fresh whipped cream and enjoy!
