Meat Lovers Stuffing



  • 1 lb. Ground Beef
  • 4 Hat Brand Beef Jalapeno Cheddar Beef Bratwurst 
  • 1 package of bacon, chopped
  • 1 large loaf of French bread, cubed
  • 2 stalks celery diced
  • 2-3 cloves garlic, diced
  • 1 white/yellow onion diced
  • 2 cups turkey/chicken broth
  • 1 stick butter
  • 2 eggs
  • Garlic salt (to taste)
  • Course ground pepper (to taste)
  • Knotty Wood Almond Cabernet Wine Blend Pellets 


  1. Take your loaf of day old French bread and slice it into small cubes. Then follow our recipe for our Cast Iron Croutons:
  2. Or place into a 200F oven/pellet grill for 15-20 minutes to dry out. 
  3. While the bread is drying out, cook the Hat Brand bratwurst in a skillet, then the ground beef, and after that has been fully cooked, brown the bacon in the same skillet.
  4. Dice up the celery, onion, garlic and place into the same skillet that the meat was cooked in so that they can absorb the flavor from the meat fat left in the pan. Cook until just softened which will take about 4-5 minutes. 
  5. Pour the turkey or chicken broth into a bowl and mix in your melted butter, and two eggs. Making sure that the butter is not hot enough to start scrambling the eggs. 
  6. In a large bowl mix together all the meat, croutons, and onion/celery mixture. Pour the turkey broth mixture over the dry ingredients and mix well. 
  7. Put into a cast iron skillet and smoke in the pellet grill at 350F for about 30 minutes until it is hot and browned on top. 
  8. Serve with your Thanksgiving turkey and enjoy!
