Smoked Knotty Rub Tri-Tip
Ingredients:
- 1 tri-tip roast (approximately 2-3 pounds)
- 2 tablespoons Cobram Estates olive oil
- ½ cup/ to taste Knotty Rub All Purpose Seasoning
- Knotty Wood Plummond Pellets
Instructions:
- Preheat your pellet smoker to 225°F and fill your hopper with Knotty Wood Plummond pellets.
- Trim any excess fat from the surface of the tri-tip, leaving a thin layer to help keep the meat moist during smoking.
- Coat the tri-tip all over with olive oil and coat the entire tri-tip evenly with the Knotty Rub seasoning.
- Once the pellet smoker is preheated, place the seasoned tri-tip directly onto the grill grate.
- Close the lid and let the tri-tip smoke at 225°F for around 60-90 minutes, or until it reaches your desired level of doneness. Aim for an internal temperature of 130-135°F for medium-rare, or adjust according to your preference.
- Once the tri-tip reaches the desired internal temperature, remove it from the pellet smoker and transfer it to a cutting board.
- Allow the tri-tip to rest for 10-15 minutes, slice up and enjoy!
- Tip: Make sure you slice against the grain to get the most tender texture out of the meat.
