Spicy Chimichurri
Ingredients:
- 1 bunch Parsley
- 1 bunch Italian Parsley
- 1 bunch Cilantro
- 1/2 cup Cobram Estates olive oil
- 2 tablespoons red wine vinegar
- 3-4 cloves garlic, finely chopped
- 2 small red chilies , or 1 red chili, deseeded and finely chopped
- ¾ tsp dried oregano
- ¾ tsp dried thyme
- Juice from ½ Lemon
- 1 tsp. Sugar
- 1 tsp. Lowrey’s Garlic Salt
- Black pepper, to taste (about 1/2 teaspoon)
Instructions:
- Finely chop up all of the parsley, cilantro, garlic, and red chilis.
- Put the chopped mixture into a bowl and mix in the red wine vinegar, olive oil, oregano, thyme, and lemon juice.
- Season to taste with garlic salt, black pepper, and sugar.
- Serve on top of tacos or steaks and enjoy!
