Sweet & Spicy Short Ribs
Ingredients:
- 1 medium onion, quartered
- 4-5 garlic cloves, coarsely chopped
- Sweet jalapeños
- 1 can crushed tomatoes
- 1/2 cup Knotty Rub
- 1 teaspoon freshly ground black pepper
- 6 pounds of beef short ribs
Instructions:
- Season the short ribs liberally with Knotty Rub
- Preheat your pellet grill to as high as it can go (500F) and place the meat over direct heat.
- Sear on all sides-about 2/3 minutes on each side.
- Place inside of a cast iron skillet and top with the onion, jalapeños, garlic, and crushed tomatoes.
- Cover and let simmer at 280 for 4-5 hours
- Once the short ribs are fork-tender, remove them from the pellet grill.
- Top with green onions and serve over rice.
