Smoked Street Corn Dip

Ingredients:

  • 2 cans corn
  • 2 blocks cream cheese 8oz
  • 1/2 cup sour cream
  • 1/2 block Pepperjack Cheese
  • 1/2 cup chopped fresh cilantro (plus extra for garnish)
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely chopped
  • 2 teaspoon Tajin (to taste)
  • 2 teaspoon Knotty Rub
  • 1/2 can Modelo
  • Knotty Wood Plummond Pellets (for smoking)
  • Tortilla chips, for serving

Instructions:

  1. Mix all of the ingredients together in a disposable metal pan or cast iron skillet.
  2. Place in the smoker at 225 F. Stir occasionally as the cheese starts to melt.
  3. Cook for 1-2 hours or until all of the cheese is melted down and everything is fully heated through.
  4. Serve with chips and enjoy!
