Smoked Street Corn Dip
Ingredients:
- 2 cans corn
- 2 blocks cream cheese 8oz
- 1/2 cup sour cream
- 1/2 block Pepperjack Cheese
- 1/2 cup chopped fresh cilantro (plus extra for garnish)
- 2 cloves garlic, minced
- 1 jalapeño, seeded and finely chopped
- 2 teaspoon Tajin (to taste)
- 2 teaspoon Knotty Rub
- 1/2 can Modelo
- Knotty Wood Plummond Pellets (for smoking)
- Tortilla chips, for serving
Instructions:
- Mix all of the ingredients together in a disposable metal pan or cast iron skillet.
- Place in the smoker at 225 F. Stir occasionally as the cheese starts to melt.
- Cook for 1-2 hours or until all of the cheese is melted down and everything is fully heated through.
- Serve with chips and enjoy!
