Smokin’ Good Brisket Recipe

Ingredients:

  • 16-pound brisket
  • 1/2-3/4 cup Knotty Rub
  • 100% Pure Knotty Wood Plum Barbeque Pellets

Instructions:

  1. Remove brisket from packaging and trim the fat.
  2. Generously season the whole brisket with Knotty rub and place into the refrigerator. Make sure to do this step at least 1 hour before placing in the smoker.
  3. Remove brisket from refrigerator and fill up your smoker with Knotty Wood’s 100% Pure Plum Barbeque Pellets and preheat the temperature to 225˚F.
  4. Place the seasoned brisket on the grill, fat side down and smoke for 8 hours. After it has been cooking for 8 hours wrap the brisket in butcher paper and put back into the smoker.
  5. Increase the temperature to 250 ˚F and continue cooking the brisket until it reaches an internal temperature of 200-210 ˚F.
  6. After it has reached temperature, remove the brisket, and let it rest for 1-2 hours.

Slice and enjoy!

    So you use only Plum pellets on brisket?? No Almond pellets or 50/50 blend of Almond and Plum pellets? But you use a 50/50 blend on beef ribs? I’m asking because I’m going to order and try Knotty Wood pellets for the first time.

      Hi! We just used Plum pellets on the brisket because we wanted a stronger, sweeter smoke flavor on that particular cook/meat. You could do Almond or a blend if you like. Many times we do a 50/50 blend of the Almond and Plum pellets on our cooks. The 50/50 blend goes well with just about anything you grill. I hope that helps!
